1.用不銹鋼容器貯存白酒,適合短期貯存。因不銹鋼容器穩(wěn)定性好,不易氧化。不利于酒的呼吸和代謝 ??诟袝圆钜恍2贿m合長期貯存。很多大的酒廠都用不銹鋼來盛放白酒,是因為不銹鋼容器貯存量比較大。

3.用陶瓷容器適合貯存原酒。陶瓷容器的優(yōu)點是可以保持酒質(zhì),空氣容易進入,從而促進酒的老熟,而且成本較低。酒在陶瓷容器中貯存越久,則溶出的金屬越多,酒的顏色越黃。所以,酒的顏色與貯存年限有關(guān)。在相同年限中,容器的材質(zhì)和質(zhì)量不同,著色度相差會很大。在陶瓷類容器中,不論是陶瓷容器還是鑲嵌瓷磚的水泥貯存池,鈣的溶出量更多,鎂的溶出量次之,再次是銅和鐵的溶出量。據(jù)研究,這些金屬離子溶于酒中,對酒的老熟起到重要作用。
